圧力寸胴は密閉構造により内部を高圧状態に保ちながら調理します。沸点が上昇し、骨を粉砕するほどの高温・高圧調理が可能です。従来の寸胴に比べ調理時間を1/2以下に短縮でき、旨味の抽出効率も大幅に向上します。A pressure cooker maintains high internal pressure during cooking, raising the boiling point enough to break down bones. Compared to conventional cookers, cooking time is reduced by more than half and umami extraction improves significantly.
1日の仕込み量と客席数を目安にお選びください。1日40L以下の仕込みには50L、40〜80Lには90L、それ以上の大量仕込みには110L・130Lが適しています。詳しくはお気軽にご相談ください。Choose based on daily prep volume. The 50L suits up to 40L/day; 90L for 40–80L/day; 110L and 130L for larger operations. Please consult us for a precise recommendation.
スープの種類によって異なりますが、豚骨スープの場合、従来4〜6時間かかっていたものが1.5〜2時間程度で仕上がります。鶏白湯スープも同様に大幅な時間短縮が可能です。Results vary by soup type. Tonkotsu that previously took 4–6 hours can typically be ready in 1.5–2 hours. Similar reductions apply to chicken paitan and other rich stocks.

使用後の洗浄・パッキン（ガスケット）の点検が主なメンテナンスです。パッキンは消耗品ですが交換が容易です。詳しい手順は引き渡し時にマニュアルをお渡しします。Daily maintenance involves cleaning after use and inspecting the gasket. Gaskets are consumable but easy to replace. A detailed manual is provided at purchase.
